Every cut in our protocol boxes is wet-aged for a minimum of 21 days — vacuum-sealed in its own natural juices at controlled refrigerated temperatures. During this time, natural enzymes break down the muscle fibers, deepening tenderness and concentrating flavor in a way that makes each bite noticeably better than what you'd find on a grocery store shelf. Most commercial beef is aged for only a few days during transport. Ours never leaves the cooler before its time. The result is steakhouse-level tenderness, priced for your weekly table — not a special occasion.

Reserve your 15-minute time slot through the portal, and your box will be cold-packed and ready when you arrive. Every box is packed in an insulated container with cool-gel ice packs. We guarantee your order will arrive frozen or partially frozen. If your order arrives fully thawed, please let us know immediately. As long as the temperature is 40°F or below, the meat is safe to refrigerate and enjoy within 3–5 days. We don't recommend refreezing fully thawed items.

Herb-Crusted Tenderloin
with Garlic Butter Pan Sauce

  • 6 × 8oz Ida Ranch Tenderloins (3 lbs total)
  • 6 tbsp unsalted butter
  • 6 cloves garlic, smashed
  • 3 sprigs fresh rosemary
  • 3 sprigs fresh thyme
  • 2 tbsp avocado or olive oil
  • Kosher salt & cracked pepper
  • ½ cup dry red wine (optional, for pan sauce)
  1. Pull tenderloins from the fridge 45 minutes before cooking. Pat completely dry with paper towels — this is the most important step. Season generously on all sides with kosher salt and cracked pepper.
  2. Heat a cast iron skillet over high heat until it just begins to smoke. Add oil and swirl to coat. Work in two batches of three — overcrowding drops the pan temperature and steams rather than sears. Cook 2–3 minutes per side without moving, developing a deep mahogany crust on all sides including the ends.
  3. After the second batch, reduce heat to medium. Return all tenderloins to the pan if space allows, or work batch by batch. Add butter, garlic, rosemary, and thyme. As the butter foams, tilt the pan and baste continuously for 2 minutes per batch.
  4. Pull each steak at 125°F internal. Rest on a wire rack for 8 full minutes — this is non-negotiable. Carry-over heat will bring them to a perfect 130–133°F.
  5. While steaks rest, deglaze the pan with red wine, scraping up every bit of fond. Reduce 1 minute, then swirl in 1 tbsp cold butter off heat. Spoon the pan sauce at the table.

Cold Tenderloin & Arugula Salad with Shaved Parmesan
Slice leftover tenderloin thin against the grain. Fan over peppery arugula with shaved parmesan, a squeeze of lemon, and a drizzle of good olive oil. Finish with flaky salt. Two minutes of work. Restaurant-level lunch. Zero waste.
